Having a gluten intolerance sometimes gets in the way of what once was your favorite food. My Dad LOVES banana bread and for a while he needed to put it on the ‘do not eat’ list until I found this awesome recipe.
Prep: 15 minutes / Serves 12
4 very ripe bananas, mashed
1/4-1/2 cup coconut oil
1 tsp pure vanilla extract
1 1/2 tsp cinnamon
1/2 cup coconut flour
1 tsp Himalayan crystal salt
Optional: 1/2 cup of raw walnuts
Preheat oven 350 degrees. Lightly grease a bread pan with coconut oil. Mix all ingredients together until well combined. Add mixture to the greased pan. Bake for 30-35 minutes. The top will be golden brown.
