Happy Sunday! I hope everyone had a great weekend. Things are starting to open up and hopefully we will return to a new normal real soon. During this quarantine, I have been cooking, eating, cooking and then eating some more! Haven’t focused on weight loss but have been excited about all of the new recipes.
Well, time to get back to weight watchers. I started taking my favorite recipes and substituting the ingredients for lower fat, less points, healthier and fresher ingredients. Tonight I substituted some ingredients in my traditional potato salad and it came out AWESOME! I had to share:
First I roasted the potatoes in the oven and let them cool. I added red and yellow pepper, some onions and small pieces of cauliflower. I mixed it with the following Artichoke Mustard Dressing.
- 1/2 cup of Fat Free Greek Yogurt (recipe called for Sour Cream)
- 4 Marinated Artichoke Hearts
- 1 Tablespoon of Pampered Chef Dijon Mustard Rub
- 1 teaspoon of Himalayan salt
- Pepper to taste
- 1 Tablespoon of Pampered Chef Chili Lime Seasoning
I mixed all of the ingredients in my Pampered Chef Cooking Blender and then folded it into the rest of the ingredients. For those following WW, it is only 2 points and so delicious!!!
Eating healthier is not necessarily depriving yourself of your favorite dishes. Have fun in the kitchen and start substituting ingredients. Feel free to post your favorite substitutions and recipes!
